Nothing says comfort food like home made soup, despite often making tomato soup, using the recipe from the lovely Jorina at Cats & Florals. I fancied something different and when a friend recently mentioned that she’d had roasted red pepper and sweet potato soup,I decided to try it for myself.Cue a trip to google to see what it had to offer,the following recipe from PaleoPot came out on top. Despite using the recipe, I did make modifications to it partly because our slow cooker is smaller than the one used on PaleoPot.
Mr Simples was bought the Argos Value Range 1.5l slow cooker for his birthday whilst at university, it been sat in the cupboards for years unused until this recipe!
What you need
2-3 average/large sweet potatoes, peeled and cubed
3 red peppers roasted(I did this in the oven, at 200° Fan for 20 minutes then turning the peppers over to roast for a further 20 minutes)
1 400g can of coconut milk
250ml chicken stock
1 onion, diced
half a teaspoon of black pepper
The PaleoPot recipe uses 2 garlic cloves and half a teaspoon of red pepper flakes both of which I omitted
How to make it
We found this recipe to make four decent sized portions,hello next day leftovers! We both really loved this soup and found it to beautiful and sweet but not overpowering.It shall definitely be making a reappearance in our kitchen this autumn and winter, it would perfect to come home to after a long day at work or after a chilly walk.
I would also recommend the Argos Value Range 1.5l slow cooker for those who are on a budget and don’t want to spend a fortune on a slow cooker as it’s perfect for just one or two families.
